Goat Cheese Salad

I love this salad, sometimes, I make it a bit excessively. In my past corporate life, I was a stickler for taking my own home-cooked food. I enjoyed making mason jar salads and this one was my all time favorite creations. Being the only vegetarian at work (at most companies), a few of my ex-coworkers always knew I was the one with the Mason jar salads in the fridge. Curious little bees that they were, they would always ask me for recipes, which I was happy to share. The wide array of flavors from sweet, creamy, crunchy and tangy, makes this extremely flavorful. I also love it for the perfect blend of fruits, nuts, seeds and veggies, giving it a wholesome nutrition. The days I work from home, I enjoy eating this salad within the solace of my quaint backyard with a nice cup of herbal tea or fresh smoothie. One of the key flavors for this salad is the home-made dressing. I’ve played around with the proportions of ingredients, but honestly, you can’t go wrong with it. It is easily fixable, if the balance of one flavor consumes the others.

Goat Cheese Salad

Salad Ingredients

  • 1-2 Cups Mixed Greens

  • 1 tbsp Goat Cheese (optional)

  • 1 Diced Apple

  • Handful of Cranberries

  • 1/2 Cup Walnuts

  • 1/4 Diced Cucumber

  • 1/2 cup sunflower seeds

  • 1/4 Cup Edamame

  • Handful of Cocoa Nibs

  • DRESSING INGREDIENTS
  • 2 Tbsp Olive Oil

  • 1 Tbsp Honey

  • 1/2 Tbsp Lemon

  • 1/2 Tbsp White Wine Vinegar

  • Salt and Pepper to Taste

Directions

  • In a large bowl, layer all the vegetables.
  • Top off with cranberries, walnuts and goat cheese.
  • In another wide bowl, whisk all the dressing ingredients together.
  • Drizzle dressing on top of the salad, sprinkle Cocoa nibs and enjoy!

  3. For the Salad, Whisk all ingredients together in a separate bowl.
  4.  Drizzle dressing on top of the salad, sprinkle Cocoa nibs and toss together.
