When you are on a time crunch and want to wow your friends, a mason jar dessert is going to be your best friend. Anything in a Mason jar sounds fancy and it gives the impression that someone has gone the extra mile. I had to create a dessert for a special birthday for a good friend and hence, this recipe was born. It’s so easy to mix and match flavors in this, I envision making this recipe as a banana split by swapping strawberries for bananas. It is so flexible, I would be curious to know what recipe’s you come up with.
Strawberry Shortcake

4 Fresh Strawberries cut into slices
1 Box Strawberry Cake Mix
1/3 Cup Greek Yogurt to substitute for 1 egg
2 Tbsp Strawberry preserve
2 Tbsp Whipped cream
Handful of Finely chopped walnuts (Optional)
Directions
- Bake the strawberry cake mix per the instructions, substitute 1/3 cup greek yogurt for each egg in the recipe. Let it cool and chill for 3-5 hours.
- In the meantime, cut the strawberries into thin slices, set aside.
- Chop the walnuts finely and set aside.
- Once the cake has chilled for a few hours, assemble the shortcake in a mason jar.
- Crumble cake and gently press it down into the bottom of the mason jar. This is the first layer.
- Second layer, place a heaping spoon of strawberry reserve on top of the cake crumbles.
- Third Layer, place the strawberry slices inward in a pattern on top of the reserve.
- Fourth Layer, a heaping spoon of whipped cream.
- Fifth Layer, another layer of fresh strawberries.
- Last layer, top off with finely chopped walnuts.
- Eat immediately or chill for another hour, before serving.
Notes
- Swap the store bought whipped cream for a coconut whipped cream to make this recipe vegan.
