Another home-made staple I am adding to my weekly routine is this recipe for granola. I made my first batch last week and I definitely should have increased the quantity, because it was gone in a jiffy. Great for all ages and so nutritious
Pop these in a big bowl of cereal, Greek yogurt or eat it as a snack. Adapted recipe from cookieandkate.
Nutty Granola

5 Cup old Fashioned Oats
1 cup chopped pecans, walnuts or other nuts
1/4 cup seed mix (optional)
1 tbsp sea salt
1/2 tsp cinnamon
1/2 tsp cardamom
1 tbsp lemon or orange zest (optional but adds bold flavor)
1/2 cup maple syrup or honey
1/2 cup olive or coconut oil
1 tbsp vanilla or almond extract
1/4 cup dried fruit
Directions
- In a large bowl, thoroughly mix all the dried ingredients together along with the spices.
- Add the oil, maple syrup, essence and mix well till each piece has absorbed the taste.
- Scope the granola mix onto a sheet pan and spread evenly
- Bake at 350 degrees for 20 minutes. Stop in-between to toss and bake again.
- Let cool uninterrupted for 45 minutes, then break into pieces.
