BBQ Buffalo Chikin Tacos

We love tacos, I mean, who doesn’t? My husband will resort to Taco bell, if he has a craving. I talk him out of the unhealthy calories and hence, I’ve come up with creative home recipes. I’m a soft tortilla person and my husband is the exact opposite, crunchy, cheesy, hard shell tacos. So, I always have both versions of tacos, stocked up in my pantry. Pro tip; if you do end up having two types of taco eaters, such as us, it’s best to buy the pre-made taco kits. These kits have taco seasoning, sauce and both, hard and soft shell tacos.

I enjoy mixing up the protein, because, let’s face it, refried beans can get  stale and boring. I use what I have on hand or rather the freezer, but you can substitute this recipe for tofu, or any other type of vegan protein.  Also, whenever I can use my air fryer, I have a really proud “weight loss” moment.  Do you feel the same? Don’t stress, you can always use your toaster or convention  oven, if you do not have an airfryer.

BBQ Buffalo Chikin Tacos

Ingredients

  • 3 vegan Buffalo Chikin Patties (check the frozen section of your local grocery store, I like Morning star)

  • 1/2 cup shredded lettuce

  • 1-2 chopped tomatoes

  • 1/2 chopped Avocado

  • Chopped Cilantro

  • 1/2 lime

  • DRESSING
  • 1 tbsp BBQ sauce

  • 1 tbsp vegan mayo

  • Shredded cheese (optional)

  • Taco sauces, salsa (optional)

Directions

  • Mix the BBQ sauce and vegan mayo in a bowl until it is thick.
  • Add a few drops of water for a sauce consistency.
  • In the airfryer, place the chikin patties and cook for 10 minutes. Flip sides to insure it is fully cooked.  Let it cool and chop into tiny pieces.
  • Heat the tortilla or taco and get ready to assemble.
  • Begin with the vegan chikin, sauce, tomatoes, lettuce, avocado cilantro, a squeeze of lime, Cheese (optional) and a drizzle more of the BBQ sauce.
  • Tilt your head and enjoy the taco!
