Couscous Salad

I love having boxed couscous on hand for quick impromptu meals. It is so versatile and I can throw any kind of leftover vegetable’s from the fridge. I also stock up on canned olives and chickpeas, so that I can add extra protein to all my dishes. Not necessary to add mint to this dish, but if you have it handy, I would highly recommend using it for a bold touch of freshness. Leftover mint, stores well in the fridge for days. Wash it and wrap it around a dry paper towel in a tight bag. This method works well for most herbs, give it a try and thank me later. 🙂

Couscous Salad

Ingredients

  • 1 Boxed Couscous Mix

  • 1 Can chickpeas

  • Fresh Mint, Parsley and Dill

  • 1/2 Lemon

  • 1 cup olives

  • 1 Diced Green or Red Pepper

  • 1 Diced tomato

  • 1/2 Diced Cucumber

  • 1 Diced Onion

  • Olive Oil, Salt and Pepper to Taste

Directions

  • Prepare Couscous as per directions from the box.
  • In a large salad bowl, assemble the salad
  • Layer Couscous on the bottom and top off with all the veggies, including chickpeas.
  • Squeeze Lemon juice, salt, pepper and olive oil
  • Garnish with Mint, Dill and Parsley
