Fig & Goat Cheese Flat Bread

Connecting the dots with the first of my Blog series about Traina foods, comes this flat bread recipe. So, what comes first, the recipe or the blog? Trick question, the products actually come first, hehe. Figs are a great snack by itself, but I love incorporating them in new recipes, since the freshness of the fruit is still intact. I finally got around to using these delicious fig samples on a flatbread recipe and it was nothing but spectacular. I always have pizza dough on hand for days like these, where creative and innovation occurs at the spur of the moment.

Ingredients

  • Half a pizza dough, thawed

  • 1/2 Red Onion, thinly sliced

  • 1/2 Tbsp Balsamic Vinaigrette

  • 1 Tbsp Garlic, finely chopped

  • 1-2 Tbsp Olive oil

  • 1/2 Cup chopped mushrooms

  • 1 Cup Freshly chopped spinach

  • 1 Cup Figs chopped in halves

  • Goat cheese to sprinkle on top

  • Basil for Garnish

Directions

  • Thaw the pizza dough, two hours prior to cooking. Pre-heat oven to 350 degrees while prepping the ingredients.
  • Thinly roll out the pizza dough into a long flatbread shape and brush olive oil and garlic on top.
  • Place the dough in the oven for 6-7 minutes, until the dough starts bubbling.
  • While the dough cooks, saute mushroom and onions in a pan with balsamic Vinaigrette. Cook till the onions are translucent and let it cool.
  • Remove dough from the oven and layer all the toppings on top of the flatbread. Begin with onion, mushroom mixture on the bottom with figs, spinach and goat cheese on top.
  • Lightly drizzle balsamic on top, along with salt and pepper.
  • Bake in the oven for 10-12 minutes, till the dough is nice and crunchy.
  • Top off with fresh basil and enjoy hot.

Notes

  • Substitute vegan cheese for goat cheese.
