Overnight Oats

With the hustle, bustle of normal mundane life, it is hard to eat healthy, especially when we are scrambling for food when starvation hits. Hence, I enjoy making this recipe on a daily bases, it’s intertwined within our normal routine. I make a big batch in a bowl for the oats to soak overnight and we have enough to last us for 3-5 days. It’s easy, quick and you can customize it to any flavor. This week I used leftover strawberry Greek yogurt with chunky strawberry bites, along with, wait for it…red velvet cake crumbles. My favorite is adding a few spoons of cocoa powder to the overnight mix. Other flavors to add are lemon, lime and vanilla essence for recipes such as key lime pie, lemon sorbet, strawberry shortcake etc. Create your own and share it with me on social media.

Ingredients

  • 1 Cup Old Fashioned Oats

  • 1 Cup Milk of Choice

  • Flavor enhancers 1 Tbsp of cocoa powder, lemon or lime juice, 1 tsp of vanilla essence etc.

  • 1 Cup Greek or Vegan Yogurt

  • Variety of Mixed Fruits

  • Toppings of choice; cocoa nibs, shredded coconut, chia seed mix, honey etc.

Directions

  • In a large bowl combine all the ingredients together, except for the flavor enhancers
  • Once the mix is thoroughly combined, gently fold in the flavor enhancer
  • Refrigerate overnight or for 5 hours minimum.
  • Add a dash of milk to loosen the mix, when you are ready to serve.
  • Top off with mixed fruits and toppings of choice.

Notes

  • Make this recipe vegan by substituting plant based yogurt and milk.
