Twist on Caesar Salad

Have you realized how a head of lettuce can stay fresh in the vegetable crisp for days? I had the tail-end of lettuce head leftover and I didn’t have the heart to dispose it. I noticed breadcrumbs in my pantry, from the corner of my eye, playing hide and seek with me. Hubby and I are sucker for breadcrumbs, we eat them as a snack, which is terrible for watching our calorie in-take. So having them in my pantry is a rare sighting.

This recipe came into creation as a pantry twist on the classic Caesar’s Salad with my take on a light refreshing lemon dressing. I didn’t have enough for two servings, so Hubby was mad that I didn’t share any with him (I mean, he doesn’t like salads, so why ask?) 😉 I love the olives in this, since it add’s an extra sour element to elevate the taste buds. If you aren’t a fan, replace it with tofu for a well-balanced meal.

Twist on Caesar Salad

Ingredients

  • Shredded Lettuce

  • Sprinkle of Garlic

  • Sprinkle of Seat Salt

  • 1-2 tbsp olives

  • Shredded Cheese

  • 1/2 Fresh Lemon

  • Breadcrumbs as garnish

  • Salt & Pepper to taste

Directions

  • Toss in lettuce, olives, and cheese in a large bowl, along with spices.
  • Place in a salad bowl.
  • Squeeze lemon and garnish with breadcrumbs.
  • Serve with soup or a sandwich.
